Potsticker Noodle Bowl

All the flavors of crispy potstickers in an easy noodle bowl with savory broth, tender veggies, and juicy pork filling.

Ingredients
  

  • 8 oz rice noodles
  • 1 lb ground pork
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 3 green onions sliced
  • 2 cups napa cabbage shredded
  • 4 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1/2 tsp red pepper flakes
  • 2 tbsp vegetable oil for frying

Method
 

  1. Step 1: Cook rice noodles according to package directions, drain and set aside.
  2. Step 2: In a large bowl, mix ground pork with garlic, ginger, and half the green onions.
  3. Step 3: Heat vegetable oil in a skillet over medium-high. Form pork mixture into small patties and fry 3-4 minutes per side until crispy.
  4. Step 4: In same skillet, add cabbage and remaining green onions, sautéing 2 minutes until slightly softened.
  5. Step 5: Pour in chicken broth, soy sauce, sesame oil, rice vinegar and red pepper flakes. Simmer 5 minutes.
  6. Step 6: Divide noodles between bowls. Ladle hot broth and veggies over top.
  7. Step 7: Add crispy pork patties to each bowl. Garnish with extra green onions if desired.

Notes

For extra crunch, top with fried wonton strips. Vegetarian version works great with crumbled tofu instead of pork.
