Peach Honey Dijon Balsamic Vinaigrette

Ingredients
  

  • 1 large ripe peach peeled and diced (about 1 cup)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 small shallot minced (about 1 tbsp)
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tbsp fresh basil chopped

Method
 

  1. Step 1: In a blender or food processor, combine the diced peach, olive oil, balsamic vinegar, honey, and Dijon mustard.
  2. Step 2: Blend until smooth, about 30 seconds. Scrape down the sides if needed.
  3. Step 3: Add the minced shallot, salt, and pepper. Pulse 2-3 times to incorporate.
  4. Step 4: Transfer the vinaigrette to a small bowl and stir in the chopped basil.
  5. Step 5: Taste and adjust seasoning, adding more honey for sweetness or vinegar for tang if desired.
  6. Step 6: Let the dressing sit for 5 minutes before serving to allow flavors to meld.
  7. Step 7: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  8. Step 8: Shake well before using if separation occurs.

Notes

For a smoother texture, strain through a fine mesh sieve after blending. Works great with stone fruits like nectarines if peaches aren't available.
