Ingredients
  

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 cup fresh raspberries

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. Step 2: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Step 3: In a large bowl, beat the butter and sugar together until light and fluffy.
  4. Step 4: Add the eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Step 5: Mix in the sour cream, lemon zest, and lemon juice until well combined.
  6. Step 6: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Step 7: Gently fold in the fresh raspberries, being careful not to overmix.
  8. Step 8: Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  9. Step 9: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  10. Step 10: Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
