Ground Turkey Taco Lettuce Wraps

A light and flavorful twist on taco night using crisp lettuce cups instead of tortillas. Perfect for when you want all the taco flavors without the carbs.

Ingredients
  

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 small onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning or 2 tbsp homemade
  • 1/2 cup water
  • 1 head butter lettuce leaves separated
  • 1 avocado sliced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup Greek yogurt or sour cream
  • 1 lime cut into wedges

Method
 

  1. Step 1: Heat olive oil in large skillet over medium-high heat. Add onion and bell pepper, sauté for 3 minutes until softened.
  2. Step 2: Add ground turkey, breaking it apart with a wooden spoon. Cook for 5 minutes until no pink remains.
  3. Step 3: Stir in garlic and taco seasoning, cooking for 1 minute until fragrant.
  4. Step 4: Pour in water and reduce heat to medium-low. Simmer for 3 minutes until sauce thickens.
  5. Step 5: Meanwhile, wash and dry lettuce leaves, keeping them whole for cups.
  6. Step 6: Assemble wraps by spooning turkey mixture into lettuce cups. Top with avocado slices, cheese, and a dollop of yogurt.
  7. Step 7: Serve immediately with lime wedges for squeezing over the top.

Notes

For extra crunch, add some diced radishes or jicama. Leftover filling keeps well for 3 days in the fridge - just reheat before serving.
