Ingredients

  • 6 bone-in skin-on chicken thighs (about 2 lbs)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3/4 cup ketchup
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard

Method

  1. Step 1: Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels.
  2. Step 2: Rub thighs with olive oil, then season evenly with paprika, garlic powder, onion powder, salt and pepper.
  3. Step 3: Arrange thighs skin-side up on a foil-lined baking sheet. Bake for 25 minutes uncovered.
  4. Step 4: Meanwhile, whisk ketchup, vinegar, brown sugar, Worcestershire and mustard in a small saucepan over medium heat for 3 minutes until thickened.
  5. Step 5: Remove chicken from oven. Brush generously with BBQ sauce, reserving some for serving.
  6. Step 6: Return to oven and bake 10 more minutes until internal temperature reaches 165°F and skin is crispy.
  7. Step 7: Let rest 5 minutes before serving with extra sauce.

Notes

For extra crispy skin, broil for the last 2 minutes. Leftovers make amazing sandwiches!
