1/4 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

8 ounces of semi-sweet chocolate chips

2 tablespoons shortening

Instructions

1. In a large bowl, mix the peanut butter, softened butter, vanilla, and powdered sugar until a dough forms.

2. Roll the mixture into small balls and place them on a parchment-lined baking sheet.

3. Chill the balls in the refrigerator for 30 minutes.

4. Melt the chocolate chips and shortening together until smooth using a double boiler or microwave.

5. Dip each ball into the melted chocolate using a toothpick and place back on the baking sheet.
