Cranberry Crumble Bars combine a buttery crust, tangy cranberry filling, and golden crumble topping for a festive, foolproof treat perfect for holidays or everyday cravings.
3 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 cup cold unsalted butter, cubed
1 large egg, lightly beaten
2 teaspoons vanilla extract
4 cups fresh or frozen cranberries (do not thaw if frozen)
3/4 cup granulated sugar (for filling)
1 tablespoon cornstarch
Zest of 1 orange
Juice of 1/2 orange
1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment, leaving overhang for lifting later.
2. Whisk flour, 1 cup sugar, baking powder, salt, and cinnamon in a large bowl. Cut in butter until crumbly.
3. Stir in egg and vanilla. Press half the dough into pan for crust; refrigerate the rest.
4. In another bowl, combine cranberries, 3/4 cup sugar, cornstarch, orange zest and juice.
5. Spread cranberry mixture over crust. Crumble remaining dough on top.
6. Bake 40–50 minutes until golden and bubbly. Cool completely before slicing.
Store in an airtight container at room temperature up to 2 days, or refrigerate up to 1 week. Bars freeze well for up to 2 months.
