Vegetable Lasagna with Sweet Potato

Ingredients
  

  • 2 medium sweet potatoes peeled and thinly sliced
  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 zucchini diced
  • 1 bell pepper chopped
  • 2 cups spinach leaves
  • 1 jar 24 oz marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Step 2: Boil lasagna noodles according to package instructions; drain and set aside.
  3. Step 3: Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until soft, about 3 minutes.
  4. Step 4: Add zucchini and bell pepper to the skillet, cooking for another 5 minutes until tender.
  5. Step 5: Stir in spinach and cook until wilted, then mix in the marinara sauce.
  6. Step 6: Spread a thin layer of the vegetable sauce on the bottom of the prepared baking dish.
  7. Step 7: Layer 3 lasagna noodles, half of the sweet potato slices, and half of the ricotta cheese over the sauce.
  8. Step 8: Repeat the layers, ending with noodles and the remaining sauce on top.
  9. Step 9: Sprinkle mozzarella and Parmesan cheese evenly over the top layer.
  10. Step 10: Cover with foil and bake for 30 minutes. Remove foil and bake for another 15 minutes until cheese is bubbly and golden.

Notes

Let the lasagna cool for 10 minutes before slicing. This helps it set and makes serving easier.
