Tomato Cucumber Dill Salad

A refreshing summer salad featuring fresh tomatoes, cucumbers, and dill, perfect for a light lunch or dinner side dish

Ingredients
  

  • 3 large tomatoes diced
  • 2 large cucumbers peeled and thinly sliced
  • 1/4 cup fresh dill chopped
  • 1/2 cup red onion thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta cheese optional

Method
 

  1. In a large bowl, combine the diced tomatoes, sliced cucumbers, and chopped red onion
  2. In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and black pepper to make the dressing
  3. Pour the dressing over the tomato and cucumber mixture, and toss to coat
  4. Sprinkle the chopped fresh dill over the top of the salad and toss again to combine
  5. If using feta cheese, crumble it over the top of the salad and!!!!!toss gently to combine
  6. Cover the bowl with plastic wrap and refrigerate the salad for at least 10-15 minutes to allow the flavors to meld
  7. Just before serving, give the salad a good stir and adjust the seasoning if needed

Notes

This salad is best made with fresh, ripe ingredients. You can adjust the amount of dill to your liking, and also add other ingredients such as Kalamata olives or artichoke hearts to suit your taste. Store any leftovers in an airtight container in the refrigerator!!!!!for up to 24 hours.
