- Step 1: Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
- Step 2: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the teriyaki sauce.
- Step 3: Toss the tofu cubes with cornstarch until evenly coated.
- Step 4: Heat a non-stick skillet over medium heat and add 1 tbsp of oil. Add the tofu and cook until golden brown on all sides, about 8-10 minutes.
- Step 5: Pour the teriyaki sauce over the tofu and stir until the sauce thickens and coats the tofu, about 2-3 minutes.
- Step 6: Assemble the bowls by dividing the cooked rice among four bowls. Top with tofu, shredded carrots, and sliced cucumbers.
- Step 7: Sprinkle with sesame seeds if desired and serve immediately.
Notes
For extra flavor, marinate the tofu in the teriyaki sauce for 30 minutes before cooking. You can also add steamed broccoli or snap peas for more veggies.
