- Step 1: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the teriyaki sauce.
- Step 2: Heat a large skillet over medium heat. Add the ground chicken or turkey and cook until browned, breaking it into small pieces as it cooks.
- Step 3: Pour the teriyaki sauce over the cooked meat and stir to combine.
- Step 4: Add the cornstarch mixture to the skillet and cook for 2-3 minutes, stirring constantly, until the sauce thickens.
- Step 5: Remove the skillet from heat and let the mixture cool slightly.
- Step 6: Arrange the butter lettuce leaves on a serving platter.
- Step 7: Spoon the teriyaki mixture evenly into the lettuce leaves.
- Step 8: Garnish with sliced green onions and sesame seeds, if desired.

Notes
For extra crunch, add shredded carrots or chopped water chestnuts to the filling. You can also substitute ground beef or pork if preferred.
