Method
- Step 1: Heat olive oil in a large pan over medium heat. Add diced onion and minced garlic, sauté until fragrant.
- Step 2: Add ground beef to the pan, cook until browned. Drain excess fat.
- Step 3: Stir in taco seasoning and a splash of water. Simmer for 5 minutes.
- Step 4: In a separate pot, bring 2 cups of water to a boil. Add rice, cover, and reduce heat to low. Cook for 15 minutes or until rice is tender.
- Step 5: Add black beans and corn to the beef mixture. Cook for another 5 minutes, stirring occasionally.
- Step 6: Fluff the cooked rice with a fork and divide into bowls.
- Step 7: Top rice with the beef mixture, shredded cheese, salsa, and avocado slices.
- Step 8: Garnish with chopped cilantro before serving.
