Taco Ground Beef Rice Bowl

Ingredients
  

  • 1 lb ground beef
  • 1 cup white rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1 avocado sliced
  • 1/4 cup chopped cilantro

Method
 

  1. Step 1: Heat olive oil in a large pan over medium heat. Add diced onion and minced garlic, sauté until fragrant.
  2. Step 2: Add ground beef to the pan, cook until browned. Drain excess fat.
  3. Step 3: Stir in taco seasoning and a splash of water. Simmer for 5 minutes.
  4. Step 4: In a separate pot, bring 2 cups of water to a boil. Add rice, cover, and reduce heat to low. Cook for 15 minutes or until rice is tender.
  5. Step 5: Add black beans and corn to the beef mixture. Cook for another 5 minutes, stirring occasionally.
  6. Step 6: Fluff the cooked rice with a fork and divide into bowls.
  7. Step 7: Top rice with the beef mixture, shredded cheese, salsa, and avocado slices.
  8. Step 8: Garnish with chopped cilantro before serving.

Feel free to customize with your favorite toppings like sour cream or jalapeños.
