Ingredients
  

  • 6 cups fresh baby spinach washed and dried
  • 1 1/2 cups fresh strawberries hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced almonds toasted
  • 1/4 small red onion thinly sliced
  • 1 avocado diced
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp poppy seeds
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

  1. Step 1: In a large salad bowl, add the fresh spinach as your base.
  2. Step 2: Arrange the sliced strawberries, crumbled feta, toasted almonds, red onion, and diced avocado on top of the spinach.
  3. Step 3: In a small bowl or jar, whisk together the olive oil, honey, white wine vinegar, Dijon mustard, poppy seeds, salt, and pepper until well combined.
  4. Step 4: Drizzle the dressing over the salad just before serving (this prevents the spinach from wilting).
  5. Step 5: Gently toss the salad to evenly coat all ingredients with the dressing.
  6. Step 6: Serve immediately for the freshest texture and flavor.

Notes

For extra crunch, add candied pecans instead of almonds. The dressing can be made 2 days ahead and stored in the fridge - just shake well before using.
