Strawberry Greek Yogurt Cheesecake

Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 cups Greek yogurt
  • 8 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries chopped
  • 1/4 cup strawberry jam
  • 1 tbsp lemon juice

Method
 

  1. Step 1: Preheat your oven to 325°F (160°C).
  2. Step 2: Mix graham cracker crumbs and melted butter in a bowl, then press into the bottom of a 9-inch springform pan.
  3. Step 3: In a large bowl, beat cream cheese and sugar until smooth. Add Greek yogurt, eggs, and vanilla extract, mixing until well combined.
  4. Step 4: Fold in the chopped strawberries gently.
  5. Step 5: Pour the mixture over the crust in the springform pan.
  6. Step 6: Bake for 40 minutes or until the center is set. Let cool completely.
  7. Step 7: In a small saucepan, heat strawberry jam and lemon juice until smooth. Let cool slightly, then spread over the cheesecake.
  8. Step 8: Refrigerate for at least 2 hours before serving.

Notes

For best results, use full-fat Greek yogurt and cream cheese. You can also top with additional fresh strawberries before serving.
