Ingredients
  

  • 6 cups mixed spring greens arugula, spinach, baby lettuce
  • 2 cups fresh strawberries hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup toasted pecans roughly chopped
  • 1/4 cup dried cranberries
  • 2 tablespoons sunflower seeds
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • Salt and black pepper to taste

Method
 

  1. Step 1: In a small skillet over medium heat, toast the pecans for 3-4 minutes until fragrant and lightly golden. Remove from heat and let cool completely.
  2. Step 2: In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, and minced garlic until well combined.
  3. Step 3: Slowly drizzle in olive oil while whisking continuously to create an emulsified dressing. Season with salt and pepper to taste.
  4. Step 4: Wash and thoroughly dry the mixed spring greens, then place them in a large salad bowl.
  5. Step 5: Add the sliced strawberries and dried cranberries to the greens, tossing gently to distribute evenly.
  6. Step 6: Sprinkle the cooled toasted pecans, sunflower seeds, and crumbled feta cheese over the top of the salad.
  7. Step 7: Drizzle the balsamic honey dressing over the salad just before serving, using only as much as needed.
  8. Step 8: Toss gently to coat all ingredients with dressing and serve immediately for the best texture and flavor.

Notes

For extra crunch, add the nuts and seeds just before serving. The dressing can be made up to 3 days ahead and stored in the refrigerator.
