Steak Fajita Bowls

Ingredients
  

  • 1 lb flank steak sliced against the grain
  • 2 tbsp olive oil divided
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 large onion sliced
  • 3 cups cooked white rice
  • 1/4 cup fresh cilantro chopped
  • 2 limes juiced
  • Optional toppings: avocado sour cream, shredded cheese

Method
 

  1. Step 1: Season sliced steak with chili powder, cumin, paprika, garlic powder, and salt. Let marinate for 10 minutes.
  2. Step 2: Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  3. Step 3: Cook seasoned steak strips for 3-4 minutes until browned and cooked through. Remove and set aside.
  4. Step 4: Add remaining oil to the same skillet and sauté bell peppers and onions for 5-6 minutes until tender-crisp.
  5. Step 5: Meanwhile, mix cooked rice with chopped cilantro and lime juice in a bowl.
  6. Step 6: Return steak to skillet with vegetables and toss for 1 minute to combine.
  7. Step 7: Divide cilantro lime rice among 4 bowls.
  8. Step 8: Top each bowl with steak and vegetable mixture. Serve with desired toppings.

Notes

For best results, slice steak against the grain for maximum tenderness. Rice can be prepared ahead of time and reheated.
