Spring Pea & Mint Pasta

Ingredients
  

  • 8 oz 225g pasta of your choice (e.g., spaghetti or linguine)
  • 2 cups 250g fresh spring peas
  • 1/4 cup 15g fresh mint leaves, chopped
  • 2 cloves garlic minced
  • 1/2 cup 120ml heavy cream
  • 1/2 cup 120ml grated Parmesan cheese
  • 2 tbsp 30ml olive oil
  • Salt and pepper to taste
  • 1 tsp 5g lemon zest
  • 2 tbsp 30g unsalted butter

Method
 

  1. Step 1: Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.
  2. Step 2: In a large skillet, heat the olive oil over medium heat and sauté the garlic until fragrant, about 1 minute.
  3. Step 3: Add the chopped mint leaves to the skillet and cook for an additional minute, until wilted.
  4. Step 4: Add the fresh spring peas to the skillet and cook for 2-3 minutes, until they start to soften.
  5. Step 5: Stir in the heavy cream and bring the mixture to a simmer.
  6. Step 6: Reduce the heat to low and let the sauce simmer for 2-3 minutes, until it has slightly thickened.
  7. Step 7: Stir in the Parmesan cheese until melted and well combined with the sauce.
  8. Step 8: Add the cooked pasta to the skillet, tossing everything together to combine.
  9. Step 9: Season the pasta with salt, pepper, and lemon zest to taste.
  10. Step 10: Serve the pasta hot, topped with additional Parmesan cheese and a pat of unsalted butter if desired.

Notes

You can also add some grilled chicken or shrimp to make the dish more substantial. Feel free to adjust the amount of cream and cheese to your taste, and don't forget to use high-quality ingredients for the best flavor.
