Spicy Thai Peanut Chicken Pasta

Ingredients
  

  • 8 oz pasta of your choice e.g. linguine or fettuccine
  • 1 lb boneless skinless chicken breast, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 onion thinly sliced
  • 2 cloves garlic minced
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup coconut milk
  • 1 tsp grated fresh ginger
  • 1/4 tsp red pepper flakes

Method
 

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente
  2. In a large skillet, heat the vegetable oil over medium-high heat and cook the chicken until browned and cooked through, about 5-6 minutes
  3. Remove the chicken from the skillet and set aside, then add the sliced onion and cook until softened, about 3-4 minutes
  4. Add the minced garlic and grated ginger to the skillet and cook for an additional 1 minute, until fragrant
  5. In a small bowl, whisk together the peanut butter, soy sauce, and coconut milk, then add the mixture to the skillet and stir to combine
  6. Add the cooked chicken back into the skillet and stir to coat with the peanut sauce
  7. Add the cooked pasta to the skillet and toss everything together to combine
  8. Season with red pepper flakes and serve hot, garnished with chopped peanuts and fresh cilantro if desired

Notes

You can adjust the level of spiciness to your liking by adding more or less red pepper flakes, and you can also add other ingredients such as bell peppers or snow peas to the dish for added flavor and nutrition
