- Step 1: In a bowl, marinate the chicken with soy sauce, vinegar, chili garlic sauce, and cornstarch. Let it sit for 10 minutes.
- Step 2: Heat oil in a large pan or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through. Remove and set aside.
- Step 3: In the same pan, add a bit more oil if needed. Sauté the garlic and ginger for about 30 seconds until fragrant.
- Step 4: Add the sliced onion and bell pepper. Stir-fry for 2-3 minutes until they start to soften.
- Step 5: Return the cooked chicken to the pan. Mix well with the vegetables.
- Step 6: Pour in the chicken broth and add sugar. Stir everything together and let it simmer for 2-3 minutes until the sauce thickens.
- Step 7: Taste and adjust seasoning with salt if needed. Remove from heat.
- Step 8: Garnish with fresh cilantro and serve hot with steamed rice or noodles.
Notes
For extra heat, add a teaspoon of red chili flakes or extra chili garlic sauce. Adjust the sauce consistency by adding more broth if needed.
