Southwest Chicken Salad

Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1 15 oz can black beans, rinsed and drained
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1 avocado diced
  • 1/4 cup cilantro chopped
  • 1/4 cup sour cream
  • 2 tbsp lime juice
  • 1 tsp honey
  • Salt and pepper to taste

Method
 

  1. Step 1: Preheat grill or skillet to medium-high heat. Rub chicken breasts with olive oil and season with chili powder, cumin, garlic powder, salt, and pepper.
  2. Step 2: Grill chicken for 5-6 minutes per side, or until fully cooked. Let rest for 5 minutes, then slice into strips.
  3. Step 3: In a large bowl, combine black beans, corn, red bell pepper, red onion, avocado, and cilantro.
  4. Step 4: In a small bowl, whisk together sour cream, lime juice, honey, and a pinch of salt.
  5. Step 5: Add sliced chicken to the vegetable mixture and toss gently.
  6. Step 6: Drizzle the dressing over the salad and toss to coat evenly.
  7. Step 7: Serve immediately or chill for 30 minutes for a cooler salad.

Notes

For extra spice, add a dash of hot sauce or diced jalapeƱos to the dressing.
