Sloppy Joe Stuffed Sweet Potatoes

Ingredients
  

  • 4 medium sweet potatoes about 8 oz each
  • 1 lb lean ground beef
  • 1 medium yellow onion diced
  • 1 bell pepper diced
  • 3 cloves garlic minced
  • 1/2 cup ketchup
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 cup shredded cheddar cheese
  • 2 green onions sliced
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 425°F. Pierce sweet potatoes all over with a fork and place on a baking sheet lined with parchment paper.
  2. Roast sweet potatoes for 45-50 minutes until tender when pierced with a knife.
  3. Meanwhile, heat a large skillet over medium-high heat. Add ground beef and cook for 5-6 minutes, breaking it up with a spoon.
  4. Add diced onion and bell pepper to the beef. Cook for 4-5 minutes until vegetables are softened.
  5. Stir in minced garlic, chili powder, and smoked paprika. Cook for 1 minute until fragrant.
  6. Add ketchup, tomato paste, Worcestershire sauce, and brown sugar. Mix well and simmer for 8-10 minutes until thickened.
  7. Season the sloppy joe mixture with salt and pepper to taste.
  8. Cut roasted sweet potatoes in half lengthwise and carefully scoop out some flesh, leaving a border.
  9. Fill each sweet potato half with the sloppy joe mixture and top with shredded cheese.
  10. Return to oven for 5-7 minutes until cheese is melted. Garnish with sliced green onions before serving.

Notes

Sweet potatoes can be roasted ahead of time and reheated. For extra flavor, mix the scooped sweet potato flesh into the sloppy joe mixture.
