Method
- Slice beef against the grain into thin strips. Toss with baking soda, cornstarch, and water. Let marinate 15 minutes.
- Whisk together oyster sauce, soy sauce, wine, sugar, and black pepper in a small bowl.
- Heat 1 Tbsp oil in wok or skillet over high heat until smoking. Sear beef in batches for 30 seconds per side. Remove.
- Add remaining oil. Stir-fry onions 2 minutes. Add peppers; cook 2 more minutes.
- Push veggies to sides. Add garlic and ginger to center; cook 15 seconds until fragrant.
- Return beef to pan. Pour sauce over everything; toss to coat. Cook 1 minute until sauce thickens.
- Garnish with green onions. Serve immediately over rice.
Notes
For spicier version, add 1 tsp chili garlic sauce with the other sauces. Vegetarian option: substitute extra-firm tofu for beef.
