Method
- Cook pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup pasta water.
- Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2 minutes per side until pink. Remove shrimp and set aside.
- In the same skillet, add remaining 1 tbsp olive oil. Sauté garlic and red pepper flakes for 30 seconds until fragrant.
- Pour in white wine and simmer for 2 minutes to reduce slightly.
- Add crushed tomatoes and oregano. Simmer for 10 minutes, stirring occasionally, until sauce thickens.
- Return shrimp to the skillet and toss to coat in sauce. Cook for 2 more minutes to heat through.
- Add cooked pasta to the skillet, tossing to combine. Add reserved pasta water as needed to loosen sauce.
- Garnish with fresh parsley and Parmesan cheese before serving.
Notes
For extra heat, add an additional 1/4 tsp red pepper flakes. Store leftovers in an airtight container for up to 2 days. Reheat gently with a splash of water to refresh sauce.
