Method
- Step 1: Preheat your grill or oven to 400°F (200°C).
- Step 2: In a large bowl, combine shrimp, potatoes, corn, sausage, garlic, and Old Bay seasoning. Toss to coat evenly.
- Step 3: Divide the mixture evenly among 4 large sheets of heavy-duty aluminum foil.
- Step 4: Drizzle melted butter over each packet and season with salt and pepper.
- Step 5: Add a lemon wedge to each packet and fold the foil tightly to seal, leaving room for steam.
- Step 6: Place the foil packets on the grill or in the oven and cook for 15-20 minutes, or until shrimp are pink and potatoes are tender.
- Step 7: Carefully open the packets (watch for steam) and sprinkle with fresh parsley before serving.
Notes
For extra flavor, add a splash of beer or chicken broth to each packet before sealing.
