Shrimp Boil Foil Packets

Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 1 lb baby red potatoes halved
  • 2 ears corn cut into 4 pieces each
  • 1/2 lb smoked sausage sliced into 1-inch pieces
  • 4 tbsp unsalted butter melted
  • 2 tbsp Old Bay seasoning
  • 1 lemon sliced into wedges
  • 2 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • Salt and pepper to taste

Method
 

  1. Step 1: Preheat your grill or oven to 400°F (200°C).
  2. Step 2: In a large bowl, combine shrimp, potatoes, corn, sausage, garlic, and Old Bay seasoning. Toss to coat evenly.
  3. Step 3: Divide the mixture evenly among 4 large sheets of heavy-duty aluminum foil.
  4. Step 4: Drizzle melted butter over each packet and season with salt and pepper.
  5. Step 5: Add a lemon wedge to each packet and fold the foil tightly to seal, leaving room for steam.
  6. Step 6: Place the foil packets on the grill or in the oven and cook for 15-20 minutes, or until shrimp are pink and potatoes are tender.
  7. Step 7: Carefully open the packets (watch for steam) and sprinkle with fresh parsley before serving.

Notes

For extra flavor, add a splash of beer or chicken broth to each packet before sealing.
