Sheet Pan Salmon and Green Beans

Ingredients
  

  • 4 salmon fillets 6 oz each
  • 1 pound fresh green beans trimmed
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup freshly squeezed lemon juice

Method
 

  1. Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper or aluminum foil.
  2. Place the salmon fillets on one half of the sheet pan, leaving about 1 inch of space between each fillet.
  3. In a large bowl, toss the green beans with olive oil, lemon zest, garlic, thyme, salt, and pepper until they are evenly coated.
  4. Spread the green beans out in a single layer on the other half of the sheet pan.
  5. Drizzle the lemon juice over the salmon fillets and green beans.
  6. Bake the sheet pan in the preheated oven for 12-15 minutes or until the salmon is cooked through and the green beans are tender.
  7. Remove the sheet pan from the oven and let it cool for a few minutes before serving.

Notes

You can customize this recipe by adding other seasonings or herbs to the green beans, such as paprika or parsley. Additionally, you can serve the salmon and green beans with your favorite sides, like quinoa or roasted potatoes.
