Sesame Peanut Noodle Salad (Cold)

A refreshing cold noodle salad made with sesame peanut dressing, mixed vegetables, and crunchy peanuts. Perfect for a light and healthy lunch or dinner.

Ingredients
  

  • 8 oz soba noodles
  • 2 cups mixed greens arugula, spinach, lettuce
  • 1 cup sliced red bell peppers
  • 1 cup sliced cucumber
  • 1 cup cherry tomatoes halved
  • 1/2 cup creamy natural peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp honey
  • 1 tsp grated ginger
  • 1/4 cup chopped peanuts

Method
 

  1. Step 1: Cook the soba noodles according to package instructions and set aside to cool.
  2. Step 2: In a blender or food processor, combine peanut butter, soy sauce, sesame oil, honey, and grated ginger to make the dressing.
  3. Step 3: Blend the dressing ingredients until smooth and creamy, adding a little water if needed.
  4. Step 4: In a large bowl, combine the cooled noodles, mixed greens, sliced red bell peppers, cucumber, and cherry tomatoes.
  5. Step 5: Pour the sesame peanut dressing over the noodle mixture and toss to combine.
  6. Step 6: Sprinkle chopped peanuts over the top of the salad and toss again to distribute.
  7. Step 7: Cover the bowl with plastic wrap and refrigerate the salad for at least 10 minutes to allow the flavors to meld.
  8. Step 8: Just before serving, give the salad a good toss and adjust the seasoning if needed.

Notes

You can customize this recipe by adding your favorite protein, such as cooked chicken or tofu, and adjusting the amount of dressing to your taste.
