Salisbury Steak Meatballs with Garlic Herb Mashed Potatoes

Ingredients
  

  • 1.5 lbs ground beef 80/20
  • 0.75 lb ground pork
  • 1 cup fresh breadcrumbs
  • 1 large egg
  • 2 tbsp heavy cream
  • 1 packet onion soup mix
  • 1 medium onion grated
  • 2 tbsp olive oil
  • 8 oz mushrooms sliced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 cup mushroom broth
  • 2 tbsp Worcestershire sauce
  • 2 lbs Yukon Gold potatoes
  • 4 cloves roasted garlic
  • 1/2 cup warm butter
  • 1/2 cup warm heavy cream
  • 2 tbsp fresh chives chopped
  • 1 tbsp fresh parsley chopped
  • Salt and pepper to taste

Method
 

  1. Step 1: Combine ground beef, pork, breadcrumbs, egg, cream, onion soup mix, and grated onion in a large bowl. Mix gently and let rest 10 minutes.
  2. Step 2: Roll mixture into 1.5-inch meatballs. Heat olive oil in large skillet and brown meatballs in batches, about 3 minutes per side. Remove and set aside.
  3. Step 3: In same skillet, sauté mushrooms until golden. Add butter and flour, cook 2 minutes. Gradually whisk in broths and Worcestershire sauce.
  4. Step 4: Return meatballs to gravy, simmer covered 15 minutes until cooked through (160°F internal temperature).
  5. Step 5: Meanwhile, boil peeled potatoes until tender. Drain and pass through ricer. Mix in roasted garlic, warm butter, cream, and herbs.
  6. Step 6: Serve meatballs and gravy over mashed potatoes, garnished with fresh herbs.

Notes

For best results, use 80/20 ground beef and don't skip the browning step. Meatballs can be made ahead and frozen for up to 3 months.
