Pineapple Rice

Ingredients
  

  • 1 cup uncooked white rice
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup pineapple chunks
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon soy sauce
  • Salt and pepper to taste

Method
 

  1. Rinse the rice in a fine-mesh strainer and drain well.
  2. Heat the oil in a large saucepan over medium heat and sauté the diced onion until translucent.
  3. Add the minced garlic and grated ginger and cook for 1 minute, stirring constantly.
  4. Add the rice to the saucepan and stir to coat the rice with oil and mix with the onion mixture.
  5. Add the water, pineapple chunks, and soy sauce to the saucepan, and bring to a boil.
  6. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed and the rice is tender.
  7. Season with salt and pepper to taste, then fluff the rice with a fork and serve hot.

Notes

You can customize this recipe by adding cooked chicken, shrimp, or scrambled eggs to make it a complete meal. Also, use fresh pineapple for the best flavor, but canned pineapple can be used as a substitute in a pinch.
