- Rinse the rice in a fine-mesh strainer and drain well.
- Heat the oil in a large saucepan over medium heat and sauté the diced onion until translucent.
- Add the minced garlic and grated ginger and cook for 1 minute, stirring constantly.
- Add the rice to the saucepan and stir to coat the rice with oil and mix with the onion mixture.
- Add the water, pineapple chunks, and soy sauce to the saucepan, and bring to a boil.
- Reduce the heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed and the rice is tender.
- Season with salt and pepper to taste, then fluff the rice with a fork and serve hot.
Notes
You can customize this recipe by adding cooked chicken, shrimp, or scrambled eggs to make it a complete meal. Also, use fresh pineapple for the best flavor, but canned pineapple can be used as a substitute in a pinch.
