Method
- Preheat oven to 350°F (175°C). Grease a 9x5 loaf pan.
- In large bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg and salt.
- In separate bowl, beat eggs, oil, sugar, vanilla and lemon juice until smooth.
- Stir wet ingredients into dry ingredients until just combined.
- Fold in zucchini (and chocolate chips/nuts if using).
- Pour into prepared pan and bake 50-60 minutes until toothpick comes out clean.
- Cool in pan 10 minutes, then transfer to wire rack to cool completely.
Notes
For best texture, wrap cooled bread and let sit overnight before slicing. Freezes beautifully for up to 3 months.
