Method
- Step 1: Grease a 9x13 inch baking dish with non-stick cooking spray and set aside.
- Step 2: Pour 6 cups of Rice Krispies cereal into a very large bowl and set aside.
- Step 3: In a large saucepan, melt the butter over medium heat.
- Step 4: Add the marshmallows and peanut butter to the melted butter, stirring frequently until completely melted and smooth (about 3-4 minutes).
- Step 5: Remove the pan from heat and stir in the vanilla extract.
- Step 6: Pour the marshmallow mixture over the cereal and mix well using a large spoon or silicone spatula sprayed with non-stick cooking spray. Use clean hands if needed as the mixture firms up.
- Step 7: Fold in chocolate chips if desired.
- Step 8: Transfer the mixture to the prepared baking dish and press down gently into an even layer.
- Step 9: Drizzle melted chocolate mixed with vegetable oil over the top if desired.
- Step 10: Allow to cool for at least 30 minutes before cutting into 16 squares and serving.
Notes
For extra gooey treats, use only 5½ cups of cereal instead of 6 cups. Any creamy peanut butter brand works well (Jif, Skippy, Peter Pan, or store brands). If marshmallows aren't fully melted, heat in 15-second increments while stirring. Store in an airtight container at room temperature for up to 5 days.
