Peanut Butter Rice Krispie Treats

Chewy and delicious peanut butter rice krispie treats that combine the classic cereal treat with rich peanut butter flavor. These simple no-bake treats are perfect for desserts, snacks, or gift-giving.

Ingredients
  

  • 4 tablespoons salted butter
  • 10 ounces mini marshmallows about 5 cups
  • ½ cup creamy peanut butter
  • ½ teaspoon vanilla extract
  • 6 cups Rice Krispies cereal
  • 1 cup chocolate chips optional
  • 2 teaspoons vegetable oil for chocolate drizzle
  • 2 tablespoons melted chocolate for topping, optional

Method
 

  1. Step 1: Grease a 9x13 inch baking dish with non-stick cooking spray and set aside.
  2. Step 2: Pour 6 cups of Rice Krispies cereal into a very large bowl and set aside.
  3. Step 3: In a large saucepan, melt the butter over medium heat.
  4. Step 4: Add the marshmallows and peanut butter to the melted butter, stirring frequently until completely melted and smooth (about 3-4 minutes).
  5. Step 5: Remove the pan from heat and stir in the vanilla extract.
  6. Step 6: Pour the marshmallow mixture over the cereal and mix well using a large spoon or silicone spatula sprayed with non-stick cooking spray. Use clean hands if needed as the mixture firms up.
  7. Step 7: Fold in chocolate chips if desired.
  8. Step 8: Transfer the mixture to the prepared baking dish and press down gently into an even layer.
  9. Step 9: Drizzle melted chocolate mixed with vegetable oil over the top if desired.
  10. Step 10: Allow to cool for at least 30 minutes before cutting into 16 squares and serving.

Notes

For extra gooey treats, use only 5½ cups of cereal instead of 6 cups. Any creamy peanut butter brand works well (Jif, Skippy, Peter Pan, or store brands). If marshmallows aren't fully melted, heat in 15-second increments while stirring. Store in an airtight container at room temperature for up to 5 days.
