Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup plain Greek yogurt
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • Zest of 1 lemon optional
  • Powdered sugar for dusting

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Step 3: In a separate large bowl, beat the eggs and sugar until light and fluffy.
  4. Step 4: Add the Greek yogurt, vegetable oil, vanilla extract, and lemon zest (if using) to the egg mixture. Mix well.
  5. Step 5: Gradually fold the dry ingredients into the wet ingredients until just combined.
  6. Step 6: Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Step 7: Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Step 8: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
