- Step 1: Pat shrimp dry with paper towels and season with salt and pepper on both sides.
- Step 2: Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering.
- Step 3: Add shrimp to the skillet and cook for 2-3 minutes per side until pink and cooked through. Remove shrimp to a plate.
- Step 4: Add remaining 1 tablespoon oil to the same skillet and sauté onion for 3-4 minutes until softened.
- Step 5: Add minced garlic, oregano, basil, and red pepper flakes. Cook for 30 seconds until fragrant.
- Step 6: Stir in diced tomatoes and olives. Cook for 3-4 minutes until tomatoes are heated through.
- Step 7: Return shrimp to the skillet and toss gently to combine with the tomato mixture.
- Step 8: Remove from heat and sprinkle with crumbled feta cheese, lemon juice, and fresh parsley before serving.
Notes
Serve over rice, pasta, or with crusty bread. For extra flavor, add 1/4 cup white wine with the tomatoes. Don't overcook the shrimp to keep them tender.
