Mediterranean Shrimp Skillet

Ingredients
  

  • 1 1/2 pounds large shrimp peeled and deveined
  • 3 tablespoons olive oil divided
  • 4 cloves garlic minced
  • 1 medium onion diced
  • 1 can 14.5 oz diced tomatoes, drained
  • 1/2 cup Kalamata olives pitted and halved
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Step 1: Pat shrimp dry with paper towels and season with salt and pepper on both sides.
  2. Step 2: Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering.
  3. Step 3: Add shrimp to the skillet and cook for 2-3 minutes per side until pink and cooked through. Remove shrimp to a plate.
  4. Step 4: Add remaining 1 tablespoon oil to the same skillet and sauté onion for 3-4 minutes until softened.
  5. Step 5: Add minced garlic, oregano, basil, and red pepper flakes. Cook for 30 seconds until fragrant.
  6. Step 6: Stir in diced tomatoes and olives. Cook for 3-4 minutes until tomatoes are heated through.
  7. Step 7: Return shrimp to the skillet and toss gently to combine with the tomato mixture.
  8. Step 8: Remove from heat and sprinkle with crumbled feta cheese, lemon juice, and fresh parsley before serving.

Notes

Serve over rice, pasta, or with crusty bread. For extra flavor, add 1/4 cup white wine with the tomatoes. Don't overcook the shrimp to keep them tender.
