Mediterranean Lemon Chicken with Artichokes and Olives

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon juiced and zested
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can 14 oz artichoke hearts, drained and halved
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup chicken broth
  • 1/4 cup fresh parsley chopped

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large ovenproof skillet, heat olive oil over medium-high heat.
  3. Step 3: Season the chicken breasts with salt, pepper, and oregano. Add to the skillet and sear for 3-4 minutes on each side until golden brown.
  4. Step 4: Remove chicken from the skillet and set aside.
  5. Step 5: In the same skillet, add garlic and cook until fragrant, about 1 minute.
  6. Step 6: Stir in lemon juice, lemon zest, and chicken broth, scraping up any brown bits from the bottom of the skillet.
  7. Step 7: Return the chicken to the skillet, adding artichoke hearts and olives around the chicken.
  8. Step 8: Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through.
  9. Step 9: Garnish with fresh parsley before serving.

Notes

For extra flavor, marinate the chicken in lemon juice and spices for a few hours before cooking.
