Mediterranean Chicken Skillet

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 small red onion thinly sliced
  • 3 cloves garlic minced
  • 1/2 cup kalamata olives pitted
  • 1 cup cherry tomatoes halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Step 1: Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with oregano, thyme, salt, and pepper.
  2. Step 2: Add chicken to the skillet and cook for about 5-6 minutes per side, until golden brown and cooked through. Remove chicken and set aside.
  3. Step 3: In the same skillet, add sliced red and yellow bell peppers and red onion. Sauté for 5 minutes until slightly softened.
  4. Step 4: Add minced garlic and cook for another minute until fragrant.
  5. Step 5: Stir in kalamata olives and cherry tomatoes. Cook for 3-4 minutes until tomatoes are slightly blistered.
  6. Step 6: Return the chicken to the skillet, nestling it among the vegetables. Cook for an additional 2 minutes to heat through.
  7. Step 7: Sprinkle crumbled feta cheese and chopped parsley over the skillet.
  8. Step 8: Serve hot, directly from the skillet, or transfer to a serving dish.

Notes

For extra flavor, marinate chicken in olive oil and herbs for 2 hours before cooking.
