- Step 1: Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with oregano, thyme, salt, and pepper.
- Step 2: Add chicken to the skillet and cook for about 5-6 minutes per side, until golden brown and cooked through. Remove chicken and set aside.
- Step 3: In the same skillet, add sliced red and yellow bell peppers and red onion. Sauté for 5 minutes until slightly softened.
- Step 4: Add minced garlic and cook for another minute until fragrant.
- Step 5: Stir in kalamata olives and cherry tomatoes. Cook for 3-4 minutes until tomatoes are slightly blistered.
- Step 6: Return the chicken to the skillet, nestling it among the vegetables. Cook for an additional 2 minutes to heat through.
- Step 7: Sprinkle crumbled feta cheese and chopped parsley over the skillet.
- Step 8: Serve hot, directly from the skillet, or transfer to a serving dish.
Notes
For extra flavor, marinate chicken in olive oil and herbs for 2 hours before cooking.
