Method
- Heat olive oil in saucepan over medium. Sauté garlic 1 minute until fragrant.
- Add diced mangoes, habaneros, honey, vinegar, lime juice, paprika and salt. Stir well.
- Bring to simmer, then reduce heat to low. Cook uncovered 20 minutes, stirring occasionally.
- Remove from heat and let cool slightly. Transfer to blender with 1/4 cup water.
- Blend until completely smooth (2-3 minutes). Add more water if needed for desired consistency.
- Strain through fine mesh sieve for ultra-smooth texture (optional).
- Cool completely before transferring to airtight jar. Flavors intensify after 24 hours.
Notes
Wear gloves when handling habaneros. Sauce keeps refrigerated 2 weeks. For milder version, remove habanero seeds before cooking.
