Mango Cucumber Salad

Ingredients
  

  • 2 ripe mangoes peeled and diced
  • 1 large cucumber peeled and diced
  • 1 small red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. First, dice the mangoes and cucumber into small, even pieces and place them in a large mixing bowl.
  2. Next, finely chop the red onion and add it to the bowl with the mangoes and cucumber.
  3. Then, chop the fresh cilantro and add it to the bowl as well.
  4. Now, in a small bowl, whisk together the lime juice, olive oil, honey, ground cumin, salt, black pepper, and red pepper flakes (if using).
  5. So, pour the dressing over the salad and toss everything together until the ingredients are evenly coated.
  6. Actually, taste the salad and adjust the seasoning if needed, adding more salt, pepper, or lime juice to your preference.
  7. Finally, serve the salad immediately for the best flavor and texture.

Notes

For a spicier version, increase the amount of red pepper flakes or add a finely chopped jalapeƱo pepper. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
