Lemon Garlic Butter Cod

Ingredients
  

  • 4 cod fillets about 6 oz each
  • 3 tbsp unsalted butter
  • 4 garlic cloves minced
  • 1 lemon juiced and zested
  • 1/4 cup chicken or vegetable broth
  • 2 tbsp fresh parsley chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes optional
  • 1 tbsp olive oil

Method
 

  1. Step 1: Pat the cod fillets dry with paper towels and season both sides with salt and black pepper.
  2. Step 2: Heat olive oil in a large skillet over medium heat. Add the cod fillets and cook for 2-3 minutes per side until lightly browned. Remove and set aside.
  3. Step 3: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  4. Step 4: Stir in the lemon juice, lemon zest, chicken broth, and red pepper flakes (if using). Let the sauce simmer for 2-3 minutes.
  5. Step 5: Return the cod fillets to the skillet and spoon the sauce over them. Cook for another 3-4 minutes until the fish is cooked through.
  6. Step 6: Sprinkle with fresh parsley and serve immediately with additional lemon wedges if desired.

Notes

For extra flavor, marinate the cod in lemon juice and garlic for 30 minutes before cooking. Pair with steamed vegetables or rice for a complete meal.
