  • 1/2 cup chia seeds
  • 2 cups canned coconut milk
  • 1/3 cup pure maple syrup
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup Greek yogurt
  • 2 tablespoons honey
  • 1/4 cup sliced almonds
  • 2 tablespoons coconut flakes
  • Fresh berries for garnish

Method
 

  1. Whisk together chia seeds, coconut milk, maple syrup, lemon juice, lemon zest, vanilla, and salt in a large bowl until well combined.
  2. Let the mixture sit for 5 minutes, then whisk again to prevent clumping of chia seeds.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight until thick and pudding-like.
  4. In a separate bowl, mix Greek yogurt with honey until smooth and creamy.
  5. Divide the chia pudding among 4 serving glasses or bowls.
  6. Top each serving with a dollop of honey yogurt mixture.
  7. Garnish with sliced almonds, coconut flakes, and fresh berries before serving.
  8. Store leftovers covered in refrigerator for up to 3 days.

Notes

For best texture, stir the pudding once more before serving. You can substitute almond milk for coconut milk for a lighter version. Add more lemon juice to taste if you prefer extra tartness.
