- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a small bowl, whisk together raspberry preserves, olive oil, soy sauce, apple cider vinegar, minced jalapeños, and minced garlic.
- Step 3: Season chicken breasts with salt, black pepper, and red pepper flakes.
- Step 4: Heat a large oven-safe skillet over medium-high heat and add a bit of olive oil.
- Step 5: Sear the chicken breasts for about 3-4 minutes on each side until golden brown.
- Step 6: Pour the raspberry-jalapeño mixture over the chicken in the skillet.
- Step 7: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
- Step 8: Garnish with fresh raspberries and chopped cilantro before serving.
Notes
For extra heat, leave some seeds in the jalapeños. Serve with rice or a fresh salad.
