Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1/2 cup raspberry preserves
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 2 tablespoons apple cider vinegar
  • 2 jalapeños seeded and minced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh raspberries for garnish
  • 2 tablespoons chopped fresh cilantro

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a small bowl, whisk together raspberry preserves, olive oil, soy sauce, apple cider vinegar, minced jalapeños, and minced garlic.
  3. Step 3: Season chicken breasts with salt, black pepper, and red pepper flakes.
  4. Step 4: Heat a large oven-safe skillet over medium-high heat and add a bit of olive oil.
  5. Step 5: Sear the chicken breasts for about 3-4 minutes on each side until golden brown.
  6. Step 6: Pour the raspberry-jalapeño mixture over the chicken in the skillet.
  7. Step 7: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
  8. Step 8: Garnish with fresh raspberries and chopped cilantro before serving.

Notes

For extra heat, leave some seeds in the jalapeños. Serve with rice or a fresh salad.
