Italian Grinder Pasta Salad

A hearty pasta salad loaded with Italian deli meats, cheese, and fresh vegetables, tossed in a zesty Italian dressing that tastes just like your favorite grinder sandwich.

Ingredients
  

  • 1 pound rotini or penne pasta
  • 6 ounces sliced salami chopped
  • 6 ounces sliced pepperoni chopped
  • 6 ounces sliced ham chopped
  • 8 ounces provolone cheese cubed
  • 1 cup cherry tomatoes halved
  • 1 medium red onion thinly sliced
  • 1 cup banana peppers sliced
  • 1/2 cup black olives sliced
  • 1/2 cup Italian dressing
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • 1/2 cup fresh basil chopped
  • Salt and pepper to taste

Method
 

  1. Cook pasta according to package directions until al dente. Drain and rinse with cold water to stop cooking process.
  2. While pasta cooks, chop all the deli meats into bite-sized pieces and cube the provolone cheese.
  3. Prepare vegetables by halving cherry tomatoes, thinly slicing red onion, and chopping fresh basil.
  4. In a large mixing bowl, combine the cooled pasta with chopped meats and cubed cheese.
  5. Add cherry tomatoes, red onion, banana peppers, and black olives to the pasta mixture.
  6. In a small bowl, whisk together Italian dressing, red wine vinegar, and Italian seasoning.
  7. Pour dressing over pasta salad and toss everything together until well coated.
  8. Add fresh basil and season with salt and pepper to taste.
  9. Refrigerate for at least 30 minutes before serving to allow flavors to meld together.
  10. Give the salad a final toss before serving and adjust seasoning if needed.

Notes

This pasta salad tastes even better the next day! Store covered in refrigerator for up to 3 days. You can substitute any Italian deli meats you prefer.
