Method
- Set Instant Pot to sauté mode and heat olive oil. Season beef chunks generously with salt and pepper, then brown in batches for 3-4 minutes per side. Remove beef and set aside.
- Add diced onion to the pot and sauté for 3 minutes until softened. Add minced garlic and tomato paste, cooking for 1 minute until fragrant.
- Pour in Guinness stout and scrape up any browned bits from the bottom of the pot. Let simmer for 2 minutes to cook off some alcohol.
- Return browned beef to the pot and add beef broth, potatoes, carrots, bay leaves, and thyme. Stir to combine all ingredients.
- Secure the Instant Pot lid and set valve to sealing position. Cook on high pressure for 35 minutes, then allow natural pressure release for 10 minutes.
- Carefully quick-release any remaining pressure and remove the lid. Remove bay leaves and discard.
- Set Instant Pot back to sauté mode. Mix cornstarch slurry and stir into the stew. Cook for 2-3 minutes until thickened to desired consistency.
- Taste and adjust seasoning with salt and pepper as needed. Serve hot with crusty bread or Irish soda bread.
Notes
For deeper flavor, brown the beef in batches without overcrowding. You can substitute the Guinness with additional beef broth if preferred. Stew can be stored in refrigerator for up to 3 days.
