Hot Honey Chicken Rice Bowl

Ingredients
  

  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp vegetable oil
  • 1/4 cup honey
  • 1 tbsp hot sauce like Sriracha
  • 1 tbsp soy sauce
  • 2 cups cooked white rice
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions
  • 1/4 cup chopped cilantro

Method
 

  1. In a bowl, mix flour, paprika, garlic powder, salt, and pepper. Toss chicken pieces in the mixture until evenly coated.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden and crispy. Remove and set aside.
  3. In a small saucepan, combine honey, hot sauce, and soy sauce. Heat over low heat, stirring until well combined and slightly thickened.
  4. Toss the cooked chicken in the hot honey sauce until fully coated.
  5. To assemble the bowls, divide cooked rice among four bowls. Top with hot honey chicken, shredded carrots, green onions, and cilantro.
  6. Serve immediately and enjoy!

Notes

For extra spice, add more hot sauce to the honey mixture. Store leftovers in an airtight container in the fridge for up to 2 days.
