Honey Pineapple Glazed Salmon

Ingredients
  

  • 4 salmon fillets 6 oz each
  • 1/2 cup honey
  • 1/4 cup pineapple juice
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp grated ginger
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh pineapple

Method
 

  1. Preheat oven to 400 F.
  2. In a small saucepan, combine honey, pineapple juice, soy sauce, brown sugar, garlic, and ginger. Bring to a boil over medium heat, then reduce heat and simmer for 5 minutes.
  3. Line a baking sheet with aluminum foil or parchment paper, and place the salmon fillets on it.
  4. Brush the honey pineapple glaze over the salmon fillets, making sure they are fully coated.
  5. Drizzle olive oil over the salmon, and season with black pepper.
  6. Bake the salmon in the preheated oven for 12 minutes, or until cooked through.
  7. Garnish with chopped fresh pineapple and serve immediately.

Notes

You can substitute the pineapple juice with orange or apple juice for a different flavor. Also, make sure to not overcook the salmon, as it can become dry and tough.
