Honey Garlic Shrimp Stir Fry

Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 1 red bell pepper sliced
  • 1 cup broccoli florets
  • 1/2 cup snap peas
  • 3 cloves garlic minced
  • 1/4 cup honey
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • Pinch of red pepper flakes optional

Method
 

  1. In a small bowl, whisk together honey, soy sauce, rice vinegar, cornstarch, and red pepper flakes. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink. Remove and set aside.
  3. In the same skillet, add bell pepper, broccoli, and snap peas. Stir-fry for 4-5 minutes until crisp-tender.
  4. Return shrimp to the skillet and pour in the sauce. Cook for 1-2 minutes, stirring constantly, until sauce thickens.
  5. Serve immediately over rice or noodles.

Notes

For extra tender shrimp, try velveting them by marinating in egg white and cornstarch for 15 minutes before cooking.
