- In a small bowl, whisk together honey, soy sauce, rice vinegar, cornstarch, and red pepper flakes. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink. Remove and set aside.
- In the same skillet, add bell pepper, broccoli, and snap peas. Stir-fry for 4-5 minutes until crisp-tender.
- Return shrimp to the skillet and pour in the sauce. Cook for 1-2 minutes, stirring constantly, until sauce thickens.
- Serve immediately over rice or noodles.
Notes
For extra tender shrimp, try velveting them by marinating in egg white and cornstarch for 15 minutes before cooking.
