Homemade Peach Cobbler Muffins

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter melted
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 2 cups fresh peaches peeled and diced
  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 2 tbsp cold butter cubed

Method
 

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together 2 cups flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix melted butter, buttermilk, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined.
  4. Gently fold in diced peaches. Spoon batter evenly into muffin cups.
  5. In a small bowl, combine brown sugar, 1/4 cup flour, and cold butter. Use your fingers to crumble the mixture over the muffin batter.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Serve warm or store in an airtight container for up to 3 days.

Notes

For extra flavor, add a pinch of cinnamon to the crumble topping. Substitute buttermilk with 1 cup milk mixed with 1 tbsp lemon juice if needed.
