Method
- Soak the beans overnight or use the quick-soak method.
- In a large pot, sauté onions, carrots, and celery until softened.
- Add garlic and thyme, cooking until fragrant.
- Add soaked beans, ham bone, and broth. Bring to a boil, then simmer for 1.5-2 hours.
- Remove ham bone, shred meat, and return to the pot.
- Season with salt and pepper. Garnish with parsley before serving.
Notes
For a thicker soup, mash some of the beans before serving.
