Ham And Bean Soup

A hearty, comforting soup made with leftover ham, navy beans, and vegetables.

Ingredients
  

  • 1 lb dried navy beans soaked overnight
  • 1 ham bone or 2 cups diced leftover ham
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 garlic cloves minced
  • 2 bay leaves
  • 1 tsp dried thyme
  • 6 cups chicken broth
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Soak the beans overnight or use the quick-soak method.
  2. In a large pot, sauté onions, carrots, and celery until softened.
  3. Add garlic and thyme, cooking until fragrant.
  4. Add soaked beans, ham bone, and broth. Bring to a boil, then simmer for 1.5-2 hours.
  5. Remove ham bone, shred meat, and return to the pot.
  6. Season with salt and pepper. Garnish with parsley before serving.

Notes

For a thicker soup, mash some of the beans before serving.
