- Preheat your grill to medium-high heat.
- Rub the flank steak with olive oil, garlic powder, smoked paprika, black pepper, and salt.
- Place the steak on the grill and cook for 4-5 minutes per side for medium-rare, or until desired doneness.
- While the steak is grilling, toss the zucchini slices with olive oil and season with salt and pepper.
- Grill the zucchini for 2-3 minutes per side until tender and slightly charred.
- Remove the steak and zucchini from the grill and let the steak rest for 5 minutes before slicing.
- Slice the steak thinly against the grain.
- Assemble bowls with mixed greens, grilled zucchini, sliced steak, and crumbled feta. Drizzle with balsamic vinaigrette before serving.
Notes
Store leftovers in an airtight container for up to 2 days. Substitute flank steak with sirloin or skirt steak if preferred.
