Grilled Shrimp Tacos with Lime Slaw

Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1/2 cup freshly squeezed lime juice
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup red cabbage thinly sliced
  • 1/2 cup red onion thinly sliced
  • 1 jalapeño pepper seeded and finely chopped
  • Salt and pepper to taste
  • 8 corn tortillas

Method
 

  1. Step 1: In a large bowl, whisk together lime juice, olive oil, garlic, cumin, smoked paprika, and cayenne pepper to make the marinade.
  2. Step 2: Add the shrimp to the marinade and toss to coat, then cover the bowl with plastic wrap and refrigerate for at least 10 minutes or up to 30 minutes.
  3. Step 3: Preheat a grill or grill pan to medium-high heat and thread the marinated shrimp onto skewers, if using.
  4. Step 4: Grill the shrimp for 2-3 minutes per side, or until they are pink and cooked through.
  5. Step 5: While the shrimp are cooking, combine the sliced red cabbage, red onion, and chopped jalapeño in a bowl.
  6. Step 6: Squeeze the juice of 1 lime over the slaw and toss to coat, then season with salt and pepper to taste.
  7. Step 7: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  8. Step 8: Assemble the tacos by placing a few grilled shrimp onto a tortilla, followed by a spoonful of the lime slaw.

Notes
