Method
- Preheat your grill to medium-high heat (about 400°F).
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, garlic powder, onion powder, oregano, basil, lemon pepper seasoning, salt, and black pepper.
- Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
- Remove the chicken from the marinade and discard the remaining marinade. Let the chicken sit at room temperature for 10 minutes before grilling.
- Lightly oil the grill grates to prevent sticking. Place the chicken breasts on the grill and cook for 5-7 minutes per side, or until the internal temperature reaches 165°F.
- Remove the chicken from the grill and let it rest for 5 minutes before slicing and serving. Garnish with additional lemon wedges and fresh herbs, if desired.
Notes
For a more intense lemon flavor, zest an extra lemon and sprinkle it over the chicken before grilling. You can also marinate the chicken overnight for even more flavor. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
