Ingredients
  

  • 6 bone-in skin-on chicken thighs (about 2.5 lbs)
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 2 green onions chopped (for garnish)

Method
 

  1. Pat chicken thighs dry with paper towels and season both sides with salt and pepper.
  2. In a large bowl, whisk together honey, soy sauce, minced garlic, olive oil, apple cider vinegar, Dijon mustard, smoked paprika, and red pepper flakes.
  3. Add chicken thighs to the marinade, turning to coat completely. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  4. Preheat grill to medium-high heat (about 400°F) and oil the grates to prevent sticking.
  5. Remove chicken from marinade, reserving the liquid. Grill chicken skin-side down for 6-8 minutes until skin is crispy and golden.
  6. Flip chicken and continue grilling for 12-15 minutes, basting with reserved marinade every 5 minutes.
  7. Check internal temperature reaches 165°F in the thickest part of the thigh.
  8. Let chicken rest for 5 minutes, then garnish with chopped green onions and serve immediately.

Notes

For extra crispy skin, pat chicken completely dry before marinating. Can also be baked at 425°F for 30-35 minutes if grilling isn't available. Store leftovers in refrigerator for up to 3 days.
